Sodium Benzoate is a widely used food preservative, with E number E211 and is a white crystalline powder. The antimicrobial effect mainly affects yeast and bacteria and is most effective at acidic conditions (pH < 4). Most widely used in acidic foods such as salad dressings, carbonated drinks, jams and fruit juices, pickles and condiments. Also used as a preservative in various technical water-based preparations such as: cosmetics, paints, adhesives, cleaning agents and metal treatment liquids. Other applications: Anti-corrosion agent in antifreeze liquids, an additive in plastic to improve strength & transparency and as stabilizer in photo developers.
