Caster Sugar 25kg is a sugar at a crystalline consistency in between granulated and icing sugar. It dissolves more easily than granulated sugar, making it the perfect choice in baking and also melts quicker, therefore incorporates faster into puddings, sauces and bases. Due to the speed by which caster sugar dissolves, it is also particularly suitable for sweetening cold drinks and cocktails. The sugar comes from either a sugar cane or sugar beets. It is usually sold with an unidentified plant source because whether it comes from a cane or beet, they are, chemically speaking, identical. White sugar is sucrose made from the sugar cane. Cane juice is extracted by crushing the canes to release the juice, this is then filtered with slake lime to remove dirt and debris that may have arisen during the harvesting process. This is then thickened into syrup through a boiling process, to produce the crystallised matter it is boiled until crystals form. The mixture of crystals and syrup is spun in a centrifuge to separate the two. The crystals of raw sugar are then dried with hot air. Raw sugar is then shipped from the country of origin where it is again liquified and processed to remove any remaining colour or non-sugar and then centrifuged to remove the remaining liquid from the sugar crystals. The sugar crystals are then ground to the necessary sized crystal. The left over liquid is used to create molasses. In terms of taste, Caster Sugar 25kg is just a finer version of granulated sugar and so tastes the same, it should also be stored the same, in a cool, dry place away from moisture or heat.   Please click here to view our delivery information and costs.
