Demerara Sugar Demerara sugar is raw cane sugar with a pale brown colour and a large, crunchy texture, made from the first pressing of sugar cane. Once the extracted cane juice evaporates, this large grain sugar is left with a subtle molasses flavour. This small amount of remaining molasses allows the demerara sugar to retain a little more mineral and nutritional content compared to white sugars, such as granulated. This means that it retains more of the brown, smoky cane juice, or molasses, that is removed from paler, more processed sugars. Molasses gives demerara the darker colour and caramel flavour. It retains some of the vitamins and minerals originally in the sugar cane plant, including calcium, iron, magnesium and vitamins B3, B5 and B6. Due to its texture, the larger crystals, demerara is particularly preferred in baking, to make a crunchy topping or to sprinkle on top of fruits and cereal for extra texture and flavour. It has been adopted as the preferred sweetener for coffee and tea connoisseurs, due to the smoky, toffee flavour that tastes great with hot drinks.
